I want to make
cupcakes for a family get together. I also want to jazz them up a bit
because, well, I’m me. I spied cookies at the grocery store when
it hit me – I can bake those cream filled cookies into my cupcakes!
Lately, I’ve been
dabbling with cake mixes because it is easier to swap out the dairy
ingredients for my food allergy than baking a cake from scratch. So
while I’m using a white cake mix for this recipe, feel free to use
your favorite white cake recipe if you like.

This recipe couldn’t
be easier! I’m using Strawberry Lemonade Trader Joe Joe’s in this
example. Strawberry Lemonade is a seasonal flavor. If you can’t
find it, you can use your favorite sandwich cream cookie that you
can buy here.

You will need the following ingredients for this
unique cupcake recipe:
White cake mix
– you can buy white cake mix here
Cake mix
ingredients – whatever the mix you are using calls for.
1 cup of crushed
sandwich cream cookies
Frosting – I am using my dairy free“buttercream” frosting recipe
Step by Step How to Make Cupcakes
1.Make the cupcake
batter according to the directions and with the ingredients your cake
mix requires. I recommend
using a batter bowl with a lid like this one because
it makes it so much easier and less mess to pour batter into a cupcake pan.
2.Crush the sandwich
cookies. I put my cookies in areusable silicone sandwich bag similar to this one,
sealed it, and used a rolling pin to crush the cookies into chunks. I
like the silicone bags because they are sturdier than thin disposable
sandwich bags that can develop holes while crushing the cookies (ask
me how I know.) Silicone sandwich bags can be cleaned by popping them in the top rack of your dishwasher.
3. Add and thoroughly mix 1 cup of crushed sandwich cream cookies to the cake batter.
4. Line a cupcake pan with cupcake liners. When I take cupcakes to a party, I use fun paper cupcake liners like these If I’m making cupcakes for home, I find thatreusable silicone cupcake liners like these pay for themselves in the long run.
5. Bake the cupcakes in a 350
degree (F ) oven for 16 to 18 minutes or when an inserted toothpick
comes out clean.
6. Allow the cupcakes to thoroughly cool before frosting and topping them with a sprinkle of crushed cookie.
Yum!
7. Eat. Enjoy. Repeat!
