My food stores are a little weird right now. I'm heavy on the Christmas cookies and fruitcake thanks our Moms loading us up before we went home and light on everything else.
It's the perfect time to make a pantry pizza for dinner!

I try to keep a batch of homemade bread maker pizza dough in the freezer for just the occasion. I find that bread maker pizza dough is an excellent use for yeast that's close its expiration date since the yeast cultures aren't as lively as they should be for bread to rise properly.
Husband and I are not married to any particular pizza topping, unlike most kids who want pepperoni or nothing at all on their pizza. That's what makes Pantry Pizza fun! We open the cupboards and freezer, pull out what we find and plop it on a pizza with homemade a little of this on a I-wonder-what-that-will-do in a tomato sauce. We usually end up with something that looks like it came from California Pizza Kitchen, tastes 10 times better, and is a whole lot cheaper!
To try to keep with my lactose free diet, I took a Lactaid (store brand) before dinner. I stuck to eating the pieces of pizza on the edges that didn't have as much cheese as the center section. In a first for me, I let Husband finish the leftovers instead of gobbling them up for lunch the next day. Fortunately, that kept my symptoms in check.
